The "historic" Lauragais roughly corresponds to the "Pays de Caucanha", which experienced its golden age from the 15th to the 16th century with the cultivation of pastel from which blue pigments were extracted. This economic boom earned it the nickname "land of plenty", the shell being a ball of crushed and dried pastel. The Lauragais country takes again the limits of the old County of Lauragais, then of the Sénéchaussée of Castelnaudary, jurisdiction of the Old regime until the Revolution.

The division of France into departments (1790) dissolves Lauragais into four departments: Haute-Garonne and Aude for the most part, and on its northern and southern limits, Tarn and Ariège. At the beginning of the 19th century, the Lauragais constituted two arrondissements (Castelnaudary and Villefranche) which were suppressed in 1926. The country experienced significant industrial progress in the 19th century, particularly in textiles, leather, wood, furniture, tile or flour mills after having benefited in the 18th century from the digging of the Canal du Midi in connection with Marseille and Bordeaux.
